Bean, Spinach and Red Pepper Quesadillas

Bean, Spinach and Red Pepper Quesadillas

I'm having a sandwich week. For my third sandwich, I've gone all Mexican and made a bean, spinach and red pepper quesadilla.

The first time I made this I just used kidney beans and it was a bit lacking in flavour so the second time I added some refried beans and some spices to perk it up and it was much better.

I used Leerdammer slices again in my sandwich and they melted really nicely, with a good gooey  stretch.

Bean, Spinach and Red Pepper Quesadillas

Creating new sandwiches this week has made me realise how boring my lunches have become. Most days they are a smoothie or a cup-a-soup. If I'm really hungry and treating myself I have a baked potato with cottage cheese or baked beans from the potato shop downstairs from my work.

This quesadilla is filled with spiced refried beans, kidney beans, spinach and slices of Leerdammer. I roasted the red peppers, but you could use jars if they are good quality. My favourite jarred peppers come from Cooks & Co.

Just in case you haven't seen my first two sandwiches yet.

  4. I really need to make quesadillas more often! We do make flatbread pizza a fair bit but I keep forgetting about the sandwich style quesadilla option!

    1. Hehe, go with the whole lettuce thing then Jennifer. I wouldn't be able to persuade Cooper to eat anything with lettuce in it.
