Three-Tin Tomato, Turmeric & Coconut Dahl - National Vegetarian Week

Three-Tin Tomato, Turmeric & Coconut Dahl - National Vegetarian Week

We love dahl in this house, although I usually spell it dal. It can also be spelled daal or dhal and it's really hard to find a definitive answer, but as this isn't my recipe, I shall stick to calling this tomato, turmeric and coconut dahl.

My favourite dal or dahl, is made with spinach and coconut and I love it so much I never try making variations of it, but this one looked so good. I was won over.

This recipe comes from The FODMAP Friendly Kitchen by Emma Hatcher.

What is FODMAP?

Like me you may have seen that title and be wondering what FODMAP is? It's actually short for Fermentable Oligosaccharides, Disaccharides, Monosachharides and Polyois.

Quite a mouthful, isn't it? Those are the scientific names for a group of molecules in food that some people have trouble absorbing, which results in IBS and other stomach complaints. If you follow a diet low in FODMAP, then you can help to alleviate or completely eradicate the symptoms and that's what this cookbook is all about.

This cookbook isn't a vegetarian cookbook, but there are a quite a lot of veggie and vegan recipes in it as well as a good guide to the diet and what ingredients are safe to use, which I imagine would be really helpful.

Thankfully I don't have any stomach problems, but I still enjoyed having a read of this and just learning a bit more. There may be someone in your family or circle of friends who this may find this cookbook really helpful and I can safely say we can all enjoy the recipes.

Here are a few of the recipes that caught my eye:

  • Quinoa, Feta & Kale Patties with Rainbow Slaw
  • Lazy Baked Eggs with Spicy Tomatoes and Feta
  • Sweet & Spicy Peanut Noodle Salad
  • Rich Chocolate Tart with a Chia Seed Base
  • Peanut & Caramel Bars

This recipe is quite high in fat. If you' re watching your weight, I would suggest, skipping the coconut oil and opting for a light version of the coconut milk. Your local supermarket should have a few options.

  3. I've just bought this book as I was diagnosed with IBS recently and my Dr recommended low fodmap. I'm looking forward to trying this recipe (and the rest of the book) as I've got stuck in a rut trying to avoid foods that cause symptoms and cooking hasn't been very exciting lately. It's nice to find a veggie option I'll be able to eat without side effects!

  12. I made your spinach and coconut dal and everyone loved it even although I just used the slow cooker and frozen spinach. For this recipe could I swap for dried lentils? Should I cook them first?

    1. Using the slow cooker is a good idea and I often use frozen spinach. I am glad you all enjoyed it. It's a real favourite here. Dried lentils are fine to use. Red lentils are my favourite for dal, toor dal or yellow split peas. A lentil that will soften, rather than a a green, brown or puy lentil that holds their shape.

  13. Thank you. I made this yesterday and it was very good.
Just a FYI: Dahl, Dal, Daal, etc. are written in different ways because they come from Devanagari script (डाहल) and transliterated into the alphabet we know. So it goes by sound, rather than by a proper spelling. Hope that helps. It literally means, "split."
