I love an easy savoury roasting tin recipe like this easy sweet potato and falafel tray bake.

They are super quick and easy to make.

A bit of chopping but not a lot and hardly any washing up at all.

Healthy too, especially this vegan savoury tray bake.

It's full of vegetables, pulses and falafel and topped with delicious sauces.

You are going to love this.

Flavours and textures that work so well together.

However, you could use up other vegetables you have in the fridge.

Why roasting tin bakes are so good


Here's why roasting tin bakes are such a superior dinner option.

  1. Dinner is cooked in one roasting pan.
  2. They are so easy, anyone could make them including children (if you help them with the oven).
  3. Full of vegetables for a healthy dinner.
  4. Frugal as you can use up any leftover vegetables you have.
  5. You can add protein by adding things like pulses, tofu, falafel or veggie sausages.
  6. Canned beans or chickpeas can be quickly added.
  7. A nutritious option.
  8. Less washing up. 

Do you need to pre-cook any of the ingredients?



Nope, all the ingredients can be added straight into the roasting tin to bake.

Of course, if you really wanted to, you could soak and cook dried chickpeas and use them.

You could also make homemade falafel, but shop-bought is fine for this, it's rather yummy when coated with spices and cooked until crisp on the outside and soft inside.

It elevates it.

If you do want to make your own falafel, try my air fryer falafel,  which is oil-free or you could make white bean falafel, or kidney bean falafel.

Alternatively for something a bit fresher, my green edamame bean and pea falafel.


Which type of tray is best for a roasting tin recipe


There are a few considerations when making a one-pot tray bake.

If you want the vegetables and other ingredients to roast and not steam, then you have to spread them out in a single layer.

Don't have a big enough sheet pan, baking tray or roasting tin to spread them in a single layer?  Then you may need to use more than one.

A fairly dry traybake can be cooked on a baking sheet, but if it includes a sauce or gravy, you need an oven dish with a bit of depth.

My favourite oven dishes for these one-pot dinners are American-style aluminum sheet pans, rectangular ceramic oven dishes and a large white enamel roasting pan.

WHITE ROASTING TIN - in case you are interested the tray I use is a Falcon White Enamel Roasting Tin which is 37cm x 29.5 cm and 6 cm deep.

It washes up a treat. 

I just throw it in my dishwasher, but it can be hand washed too.

What you need to make falafel & sweet potato tray bake


Here are the simple ingredients you need to make this delicious one-pot vegetable bake.

  • Chickpeas - soaked and cooked or tinned chickpeas
  • Falafel - shop bought are fine
  • Sweet potato
  • Red pepper
  • Beetroot - pre-cooked (I buy the vacuum-packed beets)
  • Red onion
  • Hummus
  • Red pepper paste
  • Olive oil
  • Paprika
  • Za'atar
  • Salt & pepper
  • Fresh parsley



What is za'atar?



Za'atar is a Middle Eastern spice and herb mixture.

It can vary slightly from recipe to recipe, but it's basically a mixture of sesame seeds, cumin seeds, oregano, sumac and salt.

So if you can't find it, you could pull some of the spices and herbs together to make a similar seasoning mix.

Sesame seeds are the most prominent ingredient, so it has a warm nutty flavour with a herby edge.

Here are some ideas for topping a falafel bake.
  1. Hummus - thinned into a dressing
  2. Red pepper hummus - same as above
  3. Plain - Greek yoghurt
  4. Tahini
  5. Peanut butter - thinned down
  6. Sundried tomato paste
  7. Red pepper paste
  8. Olives
  9. Fresh herbs
  10. Sesame seeds
For this sweet potato bake, I added hummus, red pepper paste and fresh parsley.


Which fresh herbs would be good in a sweet potato tray bake?



Because of the Mediterranean flavours in this roasting tin bake, fresh parsley is always a good option.

Either the curly type or flat leaf parsley.

However, fresh basil or dill would work well too with the flavours in this vegetable bake with falafel.

Thinning hummus into a dressing



Hummus can often be too thick to easily drizzle it over a roasting tin dish like this.

Your first thought may be to add olive oil to thin it down, and you can do that, but why add extra fat and calories when you don't have too.

The best way to thin hummus into a runny dressing consistency is just to add water and give it a good stir to combine.

Simples and no extra calories.

If you want to make your own hummus, try this easy hummus recipe flavoured with peanut butter instead of tahini (nut paste instead of seed paste) for a softer flavour.

How to serve roasted sweet potato bake



This bake is a delicious all-in-one dinner as it contains vegetables, chickpeas and falafel as well as some dressing for extra flavour, so it can be served as a meal as it is.

However, it is delicious paired with other foods too, so here are a few ideas.

  • Couscous - serve it with fluffy couscous and more fresh herbs
  • Rice - it would be good served with rice too
  • Pasta - serve tossed through freshly cooked pasta with extra hummus as a tasty dressing
  • Pasta salad - toss it through cold, glossy pasta for a pasta salad
  • Flatbread or wrap - serve in a flatbread or wrap spread with either the hummus or red pepper paste
  • Potato wedges - serve with potato wedges
  • Garlic bread - on the side, try this quick air fryer garlic bread

I'm sure you will come up with some ideas too.


Low calorie dinner



This simple sweet potato bake is the perfect low calorie dinner.

Great if you are watching your weight or following a diet like the 5:2 diet (original or new slightly easier version of the 5:2 diet).

Each serving only contains 376 calories if you divide it into 3 servings or 282 calories for 4 servings.

How long can you store sweet potato & falafel tray bake?



Spoon the vegetables, chickpeas and falafel into an airtight container (with the lid off) to help it cool quicker, then pop in the lid and store it in the fridge.

It can be kept in the fridge for 2-3 days and served cold or reheated.

If you are reheating in the oven, cover the dish with foil and just take it off for the last few minutes, so it doesn't brown too much.

Falafel Tray Bake - Step 1

Step 1

  • Preheat the oven and add drained (tinned) chickpeas to a large roasting tin, oven dish or sheet pan (full recipe, method and tips in the recipe card below).
  • Next, add sweet potato slices and falafel.
  • Then, add red pepper and red onions.

Step 2

  • Now add the beetroot slices.
  • Then add the herbs, spices, salt and pepper.
  • Drizzle with oil and bake until the sweet potatoes are soft, the falafel crisp and the vegetables starting to char at the edges.

  • Once the traybake is out of the oven drizzle the thinned hummus across the top.
  • Next, add dollops of red pepper paste.
  • Finally, top with chopped fresh herbs,

Easy Sweet Potato & Falafel Tray Bake - Roasting Tin Recipe

Roasting tin bakes are a quick option for dinner & this easy sweet potato & falafel tray bake is rather special with its Mediterranean flavours.

Ingredients

  • 1 tablespoon olive oil
  • 240g (8 ½ oz) chickpeas (400g/14 oz tin, drained)
  • 400g (14 oz) falafel (about 16 falafel)
  • 1 large sweet potato, peeled, halved lengthways then sliced
  • 1 red pepper, deseeded and sliced
  • 1 large (or 2 medium) cooked beetroot, halved and sliced
  • 1 red onion, peeled, halved and sliced thickly
  • ½ teaspoon paprika
  • ½ teaspoon za'atar
  • 1 pinch salt and pepper
Toppings
  • 3 tablespoons hummus (thinned with water), more if you like
  • 3 tablespoons red pepper paste (alternatives in notes below)
  • 1 handful fresh parsley, chopped

Instructions

  1. Preheat the oven to 180c/160c fan/350f/gas mark 4.
  2. Add drained chickpeas (keep the aquafaba to make chocolate mousse) to a large roasting tin, oven dish, or sheet pan.
  3. Now add the sweet potato and falafel.
  4. Then add the red pepper and red onion, and try to keep it all in a single layer.
  5. Finally, add the beetroot slices.
  6. Finish by adding the herbs, spices, salt and pepper.
  7. Drizzle with oil and bake for 30-35 minutes until the sweet potatoes are soft, the falafel crisp and the vegetables starting to char at the edges.
  8. Thin down the hummus with water until it's a good consistency to drizzle.
  9. When the traybake is out of the oven drizzle over the thinned hummus, then add dollops of red pepper paste and scatter over some fresh herbs.
  10. You can add a squeeze of lemon too.
  11. Serve and enjoy!

Notes

  • You can add other veg you need to use up.
  • If you don't have za'atar, you could add a mix of sesame seeds, cumin seeds, oregano and salt.
  • Instead of red pepper paste you could add pesto, red pesto or sundried tomato paste.
  • Sesame seeds are a nice addition before serving too.
