If you're looking for an easy dessert or a sweet tart to add to your cake stand for afternoon tea, you won't go far wrong with these vegan custard tarts topped with berries.

These custard pies are super simple to make but taste utterly luxurious.

2024 UPDATE 

Shrinkflation has hit. Ready rolled puff pastry used to be a standard 375g across big brands and supermarket own brands.

It's now shrunk to 320g (Jusrol, Tesco & Asda, maybe other supermarkets too) which can make a big difference (you end up with too much filling).

So be aware you may need extra pastry or you will have leftover filling (don't try and add it all to these smaller sheets of pastry).

Block or ready-rolled pastry?


You can use either ready-rolled or a block of puff pastry to make these custard tarts.

With block pastry, you can roll the pastry a little thicker and I always think you get a better rise with block pastry.

Of course, ready-rolled pastry is so convenient and pre-rolled for you to a thin even finish.

They are both really good quality, so I will leave it up to you which you use.

Don't worry if it's a different weight or quantity, you can just make as many hearts as you can fit in.


Is puff pastry suitable for vegans?



Most puff pastry is accidentally vegan.

From big brands like Jusrol to cheaper supermarket brands, most of them are suitable for vegans.

Just avoid those marked 'butter' as they will be dairy-based and not suitable for vegans.

Cutting pastry hearts




There are three ways you can cut your pastry hearts.
  1. Large heart cookie cutter - the easiest option.
  2. Freehand - you can use a knife with a sharp point to freehand cut hearts like I did.
  3. Paper template - if you don't have a cookie-cutter and are not confident to cut these hearts freehand, then draw and cut out a heart from paper and use that as a template.

Scoring a border



When making these vegan custard tarts, you want to score a border.

The border will be a raised edge in the final baked tarts which will hold the filling.

Just use the tip of a knife to score around the shape of the heart just in from the edge of the pastry.

DON'T cut all the way through the pastry, you are just cutting the surface, not cutting all the way through, so be gentle.

Custard filling



This custard filling is easy to make and tastes delicious.

It's a mixture of vegan ready-made custard, vegan greek yoghurt, icing sugar and vanilla.

I used a vanilla pod as it gives the best flavour and the flecking of black that looks so good.


Can you use vanilla extract?



Yes, you can use vanilla extract, but just use a little, a few drops

Remember that it is watery and you don't want to add liquid to this filling as it will thin it down.

Vanilla bean paste would be a better option as it is thicker and less watery.

Any fresh berries would work in these easy patisserie tarts.

You can use one berry or a mixture of berries, but do use fresh berries.

How to Make Easy Custard Tarts

Step 1

  • Preheat the oven (full ingredients and instructions in the recipe card below).
  • Unroll your puff pastry (if it's ready-rolled) or roll out a block of pastry with a rolling pin.
  • Cut the hearts with a cookie cutter, a paper template or freehand. You can make them as big or small as you like.
  • Score a border on each heart (not cutting through) with the tip of a knife.
  • Brush the border with oat milk (or your regular milk).

Step 2

  • Bake the hearts until golden, then leave to cool.
  • If you are using a vanilla pod, scrape the seeds out.
  • Now make up the custard filling and add the vanilla.
  • Gently press the centre of the hearts in with the back of a teaspoon, leaving the border standing.
  • Fill them with the custard mixture.

Step 3

  • Add the fresh fruit, if you are using strawberries, slice them.
  • Chill in the fridge until you are ready to serve.
  • Dust generously with icing sugar before serving.
  • Enjoy!

Vegan Custard Tarts with Berries

Easy vegan custard tarts made with puff pastry, with a creamy custard filling, topped with seasonal berries and finished with a dusting of ice sugar.

Ingredients

  • 375g (13 1/4 oz) ready-rolled puff pastry (or a block, rolled to 1/2 cm thin, don't worry if your pastry is a bit bigger or smaller)
  • 1 tablespoon oat milk (or your regular milk)
  • 125g (1/2 cup) vegan custard
  • 125g (1/2 cup) vegan greek yoghurt
  • 2 tablespoons icing sugar (confectioner's sugar), plus more for dusting
  • 1 vanilla pod (or 1/2 teaspoon vanilla bean paste)
  • 200g (7 oz) fresh berries

Instructions

  1. Preheat the oven to 200c / 180c fan / 400f / gas mark 6.
  2. Unroll your ready-rolled pastry, or roll out your block to 1/2 cm thick.
  3. Cut hearts in your pastry using a large heart pastry cutter, with a paper stencil or freehand. You are looking to get about 8-10 hearts from the pastry.
  4. Score a border around the edge of each heart, about 1/2 cm in from the edge, or maybe a little less.
  5. Brush the border with milk, then bake for 15-20 minutes until golden, then set aside to cool.
  6. Now, make up your filling. In a mixing bowl mix the custard, yoghurt, vanilla and icing sugar.
  7. Once the hearts are cool, use the back of a teaspoon to press in the inside of each heart so it flattens, leaving the border as a wall around the pastry to hold the filling.
  8. Spoon custard filling into each heart up to near the top, but not quite.
  9. Add the berries and chill until you are ready to serve.
  10. Dust with icing sugar before serving.
  11. Enjoy!

Notes

Vanilla - you can scrape the seeds from a vanilla pod or use vanilla bean paste, if using extract only use a few drops as it will water down your filling.

Berries - you can use one type of berry or a selection, just make sure they are ripe and slice strawberries as they are bigger.

Storing tarts - these will keep in the fridge for a few days, but won't be as crisp after the first day.

  17. You've made your own puff pastry? I'm impressed. I love how the heart has an inner and outer shape to it. I came across another recipe recently that called for a vanilla bean, are they easy to find?

  18. I haven't made my own puff pastry for years TB, I have given up on that now, ready-made puff pastry is pretty good.

    Here in the UK vanilla pods are easy to find. You can buy them from the spice shelf of any supermarket.
