21 Quick Vegan Meals for Midweek Dinners including, soups, chilli, bakes, burgers, wraps and fritters.

I don't know about you, but I live my life at top speed. I know it's not healthy, but that's just how it is. Meals often have to be a speedy affair too. We're home late a few times a week, with a small window of opportunity for dinner before our wee boy needs to go to bed.

So as I organise myself for the week ahead, I'm looking for meals that I can get to the table quickly, but they still have to taste good.

  4. Wow I feel totally inspired by that little lot!!!! Liking the idea of the fritters... I've been toying with the idea of doing sweetcorn ones and really must just get on with it. Thanks for the inspiration Jac... maybe we should have a vegan week in the Feeding Boys household... it feels entirely possible looking at all those gorgeous ideas.
