Meat Free Mondays - 7 Recipes for the Week Ahead (31 August 2015)

Doesn't the weekend whizz by? We had a really relaxed weekend. Apart from a bit of housework. Cooper and I made choc chip Scotch pancakes, we read, we played with his nano bugs, the boys went on walks with Huxley (while I worked) and we had a movie afternoon.



The new week is here and it's time for Meat Free Mondays.

Mushroom & Halloumi Burger Melt with Melted Leerdammer  

My last sandwich is a burger that's not a burger.

I've had a fun week coming up with new recipes for sandwiches using Leerdammer cheese. I've made a new take on a BLT, a falafel stack on a crusty baguette, deep filled quesadillas and summery pinwheel sandwiches. For my last sandwich I decided to make a mushroom burger. 

A big juicy roasted mushroom, on top of crispy golden halloumi cheese, topped with roasted red pepper and finished with a slice of melted Leerdammer.

A fabulous end to the week.

Mushroom & Halloumi Burger Melt with Leerdammer
A juicy roasted mushroom on top of golden halloumi cheese, topped with red pepper and melted Leerdammer cheese.
Ingredients
  • 1 poppy seed bun
  • 2 tbsp tomato & red pepper relish
  • 3 thick slices halloumi cheese
  • 1 large portabello mushroom
  • 1 roasted red pepper (I used Cooks & Co)
  • 2 slices Leerdammer
  • 2 tbsp pesto
Instructions
1. Slice the bin in half and set aside. 2. Roast the mushroom on a baking tray in a hot oven for 10-15 minutes until succulent.3. While the mushroom is cooking, dry fry the halloumi in a frying pan until golden on both sides.4. Spread the bottom of the bun with relish and top with halloumi.5. Next add the burger and red pepper, then top with Leerdammer cheese slices. Place under a hot grill until the cheese is bubbly and melted.6. Spread the top half of the bun with pesto and top the burger with it.7. Enjoy!

Caprese Pinwheel Sandwiches - A Speedy Lunch

 

And so my sandwich week continues. 

This is my favourite sandwich yet. I've done nothing but think about this one since I made it and speedily ate it yesterday. Oh it's so, so good. I have to buy some more flour tortillas to make some more of these tomorrow.

The flavours are those of a Caprese Salad, but instead of mozzarella I used a base of Philadelphia with garlic and herbs, added all my toppings and finished it off with a layer of Leerdammer before rolling it.


I was originally planning to wrap these up and cut them in half. I'm so glad I decided to slice them into pinwheels.They're so bonnie served up on a pretty plate.

They'd be great for a party or a wee one's packed lunch. I'm already thinking up some other flavours to try.

Caprese Pinwheel Sandwiches

A quick but super tasty lunch that's easy to put together and has so much flavour.
Ingredients
  • 1 four tortilla
  • 100g Philadelphia with garlic and herbs
  • a few fresh basil leaves
  • ½ ripe tomato, thinly sliced
  • 4 large sun blushed tomatoes, sliced into strips
  • 3 slices Leerdammer
  • a good grinding black pepper
Instructions
1. Spread the tortilla with a thick layer of Philadelphia and top with basil leaves.2. Next add both types of tomatoes evenly across the tortilla.3. Grind some pepper over the toppings and finish off with three slices of Leerdammer, like a blanket on top.4. Roll firmly from one side to the other and slice into pinwheels. Serve face up.5. Enjoy!

Bean, Spinach and Red Pepper Quesadillas


I'm having a sandwich week. For my third sandwich, I've gone all Mexican and made a bean, spinach and red pepper quesadilla.

The first time I made this I just used kidney beans and it was a bit lacking in flavour so the second time I added some refried beans and some spices to perk it up and it was much better.

I used Leerdammer slices again in my sandwich and they melted really nicely, with a good gooey  stretch.

Creating new sandwiches this week has made me realise how boring my lunches have become. Most days they are a smoothie or a cup-a-soup. If I'm really hungry and treating myself I have a baked potato with cottage cheese or baked beans from the potato shop downstairs from my work.
 
This quesadilla is filled with spiced refried beans, kidney beans, spinach and slices of Leerdammer. I roasted the red peppers, but you could use jars if they are good quality. My favourite jarred peppers come from Cooks & Co.

Bean, Spinach and Red Pepper Quesadillas

A tasty quesadilla filled with beans, spinach, roasted red pepper and gooey melted Leerdammer cheese.
Ingredients
  • 2 flour tortillas
  • 4 tbsp refried beans
  • a good pinch paprika
  • a good grinding black pepper
  • 4 tbsp cooked kidney beans
  • 100g wilted spinach
  • 1 roasted red pepper, sliced
  • 3 slices leerdammer
Instructions
1. Heat a large frying pan. 2. Spread the refried beans across one of the tortillas, sprinkle over the paprika and season with black pepper then top with a scattering of kidney beans. 3. Wilt the spinach in a sieve under a kettle of hot water refresh with cold, then squeeze all the liquid out and pat dry. Spread the spinach across the tortilla.4. Top with red pepper and slices of cheese and careful move into the frying pan.5. Top with the other tortilla and press down firmly. Heat for a few minutes, the careful flip over and give the other side a couple of minutes.6 Remove from the pan, slice and serve.7. Enjoy!

Falafel and Roasted Red Pepper Stack

 

My second sandwich of the week is a falafel and roasted red pepper stack. 

I'm doing a week of sandwiches.  I started yesterday with a veggie Leerdammer BLT and this is my second sandwich idea.

The idea for a week of sandwiches came from Leerdammer, who challenged me to come up with new sandwich ideas using their handy sliced cheeses that combine the mild flavour of Gouda with the large holes of Emmental. 

Let's face it we all get in a lunchtime rut. I know I do.

This is rather large, so it's a perfect lunch to share, or just cut it in half and keep the second half for the next day. 


You may notice that wee jar in the background. It's Tesco Finest Sweet Tomato and Birds Eye Chilli Chutney. I just discovered it this week. It's great for perking up sandwiches. Not too hot, but has a great flavour.

Falafel & Roasted Red Pepper Stack with Leerdammer
A deep stacked sandwich featuring red pepper, falafel and Leerdammer sandwich slices, lots of salad, mustard and chutney. Pimp up your lunchtime.
Ingredients
  • 1 part-baked baguette, baked until crisp
  • 2 tbsp spicy tomato chutney
  • 1 large leaf iceberg lettuce, shredded
  • 1 medium carrot, coarsely grated
  • 1 small red pepper, roasted (or jarred roast pepper)
  • 3 falafel, cut in half
  • 2 slices Leerdammer
  • a good drizzle yellow (American) mustard
  • a good grinding black pepper
Instructions
1. Once the baked baguette is cool, slice down the middle and spread chutney on the bottom half and top with lettuce and carrot. 2. Top with the slices of Leerdammer, red pepper and falafel. 3. Grind some black pepper over your sandwich fillings, then drizzle some mustard over the top half of baguette.4. Cut in half and serve.5. Enjoy!Notes: You can use fresh baguette for this sandwich. I find part-baked baguettes are handy to have on standby and save an extra trip to the bakery.

The Leerdammer BLT (beet, lettuce and tomato)

The Leerdammer BLT. Beet, Lettuce and Tomato on tiger bread with Leerdammer and a spicy extra. Perks up lunch a treat. 

I posted Meat Free Mondays this morning, so that's dinner covered. Now it's time to think about lunch for tomorrow and the rest of the week.

Leerdammer challenged me to come up with some tasty sandwich recipes to make lunchtime fun, I couldn't resist and said yes. It can be so easy to get into a lunch time rut.

LEERDAMMER cheese combines the mild flavour of Gouda with the large holes of Emmental. It's named after the town near the dairy called Leerdam. It comes in sandwich size slices, has a mild nutty flavour and it suitable for vegetarians.

So for the rest of the week I'll be sharing some delicious sandwich ideas. Today I bring you the Leerdammer BLT, but instead of bacon it's beet. So, so good!

The Leerdammer BLT
A fresh sandwich of Leerdammer, beet, lettuce and tomato, with spicy chutney on tiger bread.
Ingredients
  • 2 slices tiger bread (or bloomer bread)
  • 2 tbsp tomato and chilli chutney
  • 1 tbsp mayonnaise
  • 2 large leaves of iceberg lettuce
  • 4 slices Leerdammer cheese
  • 1 ripe tomato
  • 4 pickled baby beets, halved
  • a good grinding of black pepper
Instructions
1. Spread the bottom slice of bread with chutney and the top with mayonnaise.2. Slice the lettuce and pop on top of the chutney, then add the slices of cheese. 3. Slice the tomatoes and add them to the sandwich.4. Add the beet and a good grind of black pepper, then top with the second slice of bread. Cut in half and tuck in.5. Enjoy!

Meat Free Mondays - 7 Recipes for the Week Ahead (24 August 2015)

It's Monday morning *yawn* and a busy week lies ahead. The weekend seems to whizz past, doesn't it?

My weekend felt particularly short as I was working on Saturday. After work I went out for a meal, which was super disappointing. Home cooking is much nicer, isn't it, but sometimes on a Saturday night I'm just too tired to cook and it's nice to catch up with family and friends.

Sunday was a round of cleaning and tidying and on Sunday night Graham drove through to Fife to collect our sweet boy from his Grandparents.

Now it's time to prepare for the week ahead. although I'm not preparing too far ahead as I have a veg box delivery on Wednesday, so I'll have to wait and see what arrives, but for you my friends I have another collection of wonderful veggie recipes to see you through the week.
